Abstract

Ayam Penyet is a fried chicken dish typical of East Java which is varied by pounding it with a pestle and then spreading chili sauce on top. The use of chicken as a side dish, which is popular among Indonesians, has led to a significant increase in sales of ayam penyet. Ayam penyet businesses began to appear a lot, especially on the island of Java. Therefore, to maintain and develop this business, proper and effective production techniques and operational management are needed. Therefore, this internship report was created with the aim of knowing the implementation of production techniques and identifying the obstacles encountered related to operational management and providing solutions to problems encountered in Ayam Penyet Special Mbak Zuni. The methods used are interviews, observation, and the adoption of theories from previous journals. During this internship, the writer will find out whether the Production Technique used is appropriate and effective. The findings from Ayam Penyet Special Mbak Zuni Internship Report show that the production technique used is quite effective, but there are still several obstacles related to operational management. Therefore, Ayam Penyet Special Mbak Zuni MSME needs to evaluate production techniques and operational management used in these MSME so that the business they run can develop and survive in business competition.
